Adding hops right after the boil finishes has become an important technique to pack a big hop aroma in beer. Mr. Wizard shows you best practices for hop stands and whirlpool hop additions [Plus Members].

Bine should be near brilliant clarity and a burnished golden color with moderate high carbonation. The hop aroma and flavor are intense and feature passion fruit, papaya, grapefruit, lemon rind, pine, and resin. The strong hop bitterness is firm but not abrasive while the dry finish keeps you coming back for more.

The Shop Around the Corner: My local homebrew store

I have now lived in Havertown, Pennsylvania for 44 years. It is a wonderful residential community in the suburbs of Philadelphia with a population of 37,000. In that time, a homebrew shop that I have actually never frequented has stood on busy Darby Road for 27 of those years. What do I, a 70-year-old grandmother, know of beer? Not much to be honest. During summer I'll drink a Corona with slice of lime. I'll pick up a 6-pack of Harp at St. Patrick's Day and a 6-pack of Lowenbräu for Oktoberfest. Adding water to carboys after racking

Does adding pre-boiled water to the carboy after I rack my beer help against oxidation (less headspace) or hurt it (risk of splashing)?


A Headspace can cause oxidation, especially in secondary fermenters. Anything that is done to eliminate air helps minimize oxidation. And adding de-aerated water can reduce the odds of oxidation, but the process deserves more than a simple answer. So read on Adam!

Talking Oxidation and Hop Fade 

Follow-up to previous answer: I answered a question from Scot in Chicago, Illinois that was published in the November 2019 edition of BYO. His question was about hop fade and why some of his recent New England IPAs lost hop aroma quickly after packaging. Scot let me know in his question that he was a very experienced brewer. Knowing that biased my answer because I did not think that he suddenly had a rash of oxidation problems. His question had me publicly scratching my head. Thanks to emails from Karl Helmstetter and Joe Walts (below), I now offer some more insight into the possible causes of hop fade.

The Mobile Beer Lab: Staying organized and portable

I try to keep my brewing equipment clean and organized, but that doesn't always happen. Clean, yes . . . organized, no. When it comes to quality control tests while homebrewing, it can be easy to skip over a step because you just don't want to look for that packet of pH buffer solution you swore you left tucked away next to your pH meter and you don't need a fresh calibration to make beer. You can absolutely make beer without a hydrometer or pH meter. You definitely don't need a microscope.
