Packaging from a keg, Horst's Eisbock recipe and more

Brew Day Bulletin
Dear Homebrewer,
This is one of our favorite Eisbock recipes: Horst's Eisbock [Free]. Skilled Archer [Members] is probably best described as a British-style golden ale, but a slightly odd one given that it's fermented with a kveik yeast.
What are the best options when packaging from a keg [Free]? Mr. Wizard explains using a corny keg for chilling & primary fermentation [Members] and examines the subtleties of beer gas [Free].
Learn about 21st century British hops [Members], and watch Ashton walk through yeast harvesting [Plus Video].
This week's featured projects are a fermentation cabinet [Free] and a better grain mill [Members].
Cheers!

Packaging From a Keg: Consideration for beer on the go

Even in today's climate of, "Hey, why not just go straight to all-grain with brew-in-a-bag," homebrewers almost all start by packaging their beer in bottles. We suppose you could drink it straight from the fermenter, but we'll assume for the moment that we're all people of refinement who enjoy cold and briskly bubbled beer. Inevitably, a large portion of "dedicated' (read obsessed) homebrewers eventually reach peak bottle frustration and switch to kegging and draft beer.

The Subtleties of Beer Gas

I read the article on serving stouts with beer gas on your website, and I'm hoping you have some insight into a situation I'm having. I recently added a beer gas line and a stout faucet to my home kegerator. I got a Keg of Belching Beaver Peanut Butter Milk Stout from a local store. The beer comes out very, very foamy during pouring, but the head disappears completely after a minute or two and then the beer is flat. In the aforementioned article, it describes a period of time for conditioning a keg on beer gas. I guess my primary question is: Is this step typical for a commercial keg or is that step normally only homebrew? Do all commercial kegs for nitro stouts need to be conditioned over a week like this? Any insights you have would be helpful and appreciated.

A Years ago I was talking to a crusty dude named Larry who worked for a local beer distributor about the dirty draft beer tricks that can be played by competing distributors.

Project
Fermentation Cabinet

How can I make my homebrew better? That was and still is the #1 question for most homebrewers. Temperature control during the fermentation is very important but it was difficult for me to control. Cooling was my problem, so I came up with this fermentation conditioner idea. I decided to take an old dehumidifier and donate it to a better cause.

21st Century British Hops

If you've used British hops before, particularly to make a traditional British beer style, the chances are that you'll have used one or more of the following three hops: Golding, Fuggle, or Challenger. It's not hard to see why; most recipes for British beers list these as the hops you should use and they will give you that authentic earthy, herbal, floral flavor that is the hallmark of many British ales. The slightly more adventurous amongst you may also have encountered Target; another fine U.K. hop variety with a robust sage and spice aroma that, again, lends itself well to traditional British ale styles; or perhaps First Gold, a Golding relative that gives fantastic marmalade and orange flavors, or Northern Brewer.

Build a Better Grain Mill

I like starting my brew days by milling my own malt. My first mill was a hand-cranked model and the first thing I did upon receiving it was install my electric drill to power it. Since the drill chuck diameter was larger than the distance from the shaft to the base, it was tough to install tightly and the chuck rubbed on the provided MDF base. It wasn't a great solution and was a pain to keep the speed consistent. My next attempt at a power solution was repurposing an old electric mixer motor, but it didn't have enough torque to maintain rotation. My third go-round was to adapt a small DC motor with some gears onto a second-hand metal frame I'd purchased at auction. Neither worked as well as I had hoped, so I reattached my drill and hit the digital drawing board.
