Lagers will put on display a brewer's skills in both the brewhouse and the cellar as the recipes are often simple, but the techniques to brew them require a delicate touch and planning. Q I have been brewing for almost 30 years. To increase mash efficiency, I mash overnight. I do this with beers of low to average original gravities, but especially with high-gravity beers. I will start the mash at 155–160 °F (68–71 °C) around 11 p.m. and sparge in the morning around 9 a.m. By then, the temperature of the mash is around 145 °F (63 °C). I have found this method to be successful at conversion and the beers have been good. Is there any reason why I should not be doing this? I am often asked for brewing recommendations and I want to recommend this, but I need to know if I am wrong. A I am a great fan of methods that make things easier and this method is certainly a time-saver when it comes to scheduling those precious weekend hours. Well, a different take on that line of thinking is if there is an object that is the right size, you can make a tap handle out of it. Whether it's an old trophy from Little League baseball, a piece of driftwood that washed up on the beach, or emptied yeast vials — as long as you can attach a threaded insert to it and it fits, it can be displayed on top of your kegerator to help dispense homebrew. Charles Dickens may have thought he was describing the French Revolution, but his expression of a near universal sentiment equally captures the flood of homebrewing information available today. We have unprecedented access to brewing (and homebrewing) information and ingredients — a wonderful thing. Simultaneously, we have an overload of information (wait a minute, this sounds even more universal!). As anyone who has ever tried to hit every booth at Homebrew Con Club Night can tell you, it's possible to have too much of a good thing! Read more | | Ask Mr. Wizard Making Brown Malt Q I've seen various recipes, mostly for porters, that call for the use of brown malt. I have had no luck finding it at any of the area homebrew shops and was wondering if I could approximate it by heating a batch of pale malt in the oven for a while. I guess that it shouldn't be darker than chocolate malt, but just how dark should it be? Could I eliminate this dilemma altogether and use a chocolate malt in its place? Read More | | Project Pumped Up Toolbox There are many reasons why a pump can be a significant time saving addition to your brew day. How the brewer implements the equipment to the process can have just as large an impact. About three years ago, I decided the time had come to upgrade to a pump, but without a dedicated brewing structure, I needed to design a portable solution. Since there was also an ongoing need to organize many of the smaller brewday items, this design for a brewing toolbox seemed to solve multiple needs at once.
