How To Make a Sharpening Station For Keeping Your Tools Razor Sharp

The goal of honing a tool or knife on a set of stones is to wear away a layer of steel, exposing a fresh layer of steel which you will shape to an exceedingly fine and well-polished point.

To do that, you need stones in a range of grit, from coarse to fine and you need a lubricant intended to work with the stones—water for water stones, oil for oil stones. The lubricant does two things. It helps the steel slide more easily over the stone's surface and it also suspends the steel and stone particles. Keeping the particles aloft in a layer of fluid (oil or water) keeps them from being ground into the stone's surface.
