We love granola because it is so flexible. Not only can you swap oats for puffed rice, pecans for almonds, or raisins for dried cranberries...you can flavor it with your favorite spices and extracts. You can simply follow the recipe steps, but add your own twist when it's time to add spices. We love the recipe above because it isn't shy with vanilla extract, chai spices, and Mediterranean sea salt. Spice Spotlight: Cocoa

Cocoa is a standby for flavoring granola, especially with perfectly toasted flakes of coconut. We also cannot resist adding a heaping tablespoon of cocoa nibs for an addictive, chocolatey crunch. Check our Cocoa Spotlight for more cocoa recipe inspiration.

Granola Spice Favorites

Cocoa Nibs
These fermented, roasted cacao beans taste of unsweetened dark chocolate. The nibs are rich, slightly bitter, and delicious. Sprinkle them on cakes and ice cream. Use them in banana bread or mole, or substitute them for nuts in baked treats. 
Chai Spices
In Hindi, masala chai translates to 'spiced tea with sugar and milk.' Our version comes with a hint of vanilla with the spiced tea. To make an authentic cup as sold by chaiwallas from Mumbai to Kolkata, stir 1 tbl of our chai spices and 2 tbl of milk into a cup of black tea.

Crystallized Ginger Nibs
Enjoyed as a candy since the days of Marco Polo, crystallized (or candied) ginger is created by cooking young slices of ginger root in cane sugar syrup. Ginger nibs make great decorations and are lovely in baked goods, trail mix or homemade granola.
Pumpkin Spice
This fresh blend of Cinnamon, allspice, ginger, nutmeg, cloves, mace is a baker's best friend. While pumpkin pies and fancy lattes are obvious recipe choices, we love sprinkling this into banana bread batter, homemade granola, and French toast.
