Ancho chiles are a stepping stone into Mexican cuisine's deep flavors and storied traditions. Their rich, mild, and sweet flavors form the foundation of countless salsas, stews, moles, and meat marinades. It should come as no surprise that Ancho chiles are the most widely used chile pepper in Mexico. Visit our blog to read our Ancho chile spotlight and discover what makes this chile pepper so essential.

Chicken Enchiladas in Red Sauce

Ancho Chiles
In Mexican Spanish, there are three peppers that change names when changing state. Smoked jalapeños become a 'chipotle.' A dried chilaca pepper is a pasilla or 'little raisin.' Dried poblanos are 'ancho,' which is Spanish for 'wide.' Sweet and earthy, with just a touch of heat, these ancho chiles are native to the Mexican state of Puebla.
Ground Ancho Chiles
Ground ancho chile is made from the mild outer flesh of the dried poblano chile pepper. Your palate will enjoy an intense, wonderfully rich chili flavor with little to no heat. These peppers measure in around 500 Scoville heat units. This maroon ancho chile pepper powder is a great base for Mexican dishes, homemade chili, sauces and meat rubs.
