"First introduced in the winter of 1983, Bigfoot is a cult-classic beer brewed in the barleywine style, meaning a strong, robust, bruiser of a beer with the refined intensity of a wine."

(5 gallons/19 L, all-grain)
OG = 1.096 FG = 1.024
IBU = 100 SRM = 14 ABV = 9.6%

Ingredients
18.5 lbs. (8.4 kg) 2-row pale malt
1 lb. 7 oz. (0.64 kg) caramel malt (60 °L)
9 AAU Chinook hops (150 min.) (0.75 oz./21 g at 12% alpha acids)

Imperial Stout: Back in black

When the weather starts turning cool, I immediately think of brewing and drinking big, rich beers. Sure, winter warmers, old ales, and barleywines will do the job, but when I want to turn it up to 11, my focus turns to that Darth Vader of beer styles, imperial stout. Historically, it was a strong English beer that was exported to the Russian Empire, but today it is a popular craft beer style in the U.S. and elsewhere in the world. It often serves as the base style for barrel-aged beers and beers with special ingredients.

What are some tips for making gluten-free beer?

Q My good friend is gluten free and I have been brewing for some time now and we have talked about making a gluten-free beer for him to enjoy. My local homebrew shop sells gluten-free extract but I am looking for more to add. He once tasted a black IPA and enjoyed it a lot. What are things I can add to make a better beer? Would soaking uncrushed black or chocolate malt in cold water result in glutens? Is lactose sugar okay to use or will there be glutens left? What are some other grains to add or roast myself to add some complexity?


A Celiac Disease is an immune reaction to certain gluten proteins found in wheat, barley, rye and oats. This means that when a brewery brews a beverage specifically for this group of people great caution must be taken to prevent these special gluten-free beers from being contaminated by the normal brewery environment.

A Victory classic that came out of the brewmasters' love for rich malts and intense hops, the robust malt flavors are complemented and balanced with a huge charge of classic hop types. Storm King is a well-attenuated beer possessing a mouthfeel more reflective of a double IPA rather than a prototypical imperial stout.

OG = 1.086  FG = 1.018
IBU = 100  SRM = 50  ABV = 9.1%

13.5 lbs. (6.1 kg) Pilsner malt
2.25 lbs. (1 kg) Vienna malt

Iodine Starch Testing and Defining Mash Conversion

I've been brewing for a few years now and have very recently joined up with BYO. In the last few days I've reviewed the Double IPA recipe listings, which look really good and I'm gearing up to start my first clone attempt. In the instructions is the phrase "until the enzymatic conversion is complete." Problem is I've never heard that phrase before so could you help by explaining what it means and advising how I can tell when it's complete.
