Feta and Dill Pollen Cheese Ball

This recipe comes to us courtesy of our friend, That Charcuterie Chick. The creamy feta cheese pairs particularly well with dill pollen. Serve this dish with your favorite crackers or freshly baked crostini.

Dill Pollen
Dill pollen is hand-collected from California-grown dill plants at peak blossom. Dill pollen can be used in any recipe that calls for dill weed or dill seed. However, the pollen's flavor is far more nuanced and complex than the other two. Dill pollen's flavor is more concentrated, floral, minty, and sweet.
Fennel Pollen
There's a reason why chefs often refer to fennel pollen as 'culinary fairy dust.' Its notes of anise, licorice, citrus, and honey make it both a flavor and flavor booster. Fennel pollen is delicious in Sicilian pasta dishes and sprinkled on pork chops. Use it as a finisher as you would use fleur de sel.
