Mick, the bartender at the Monk's Kettle in San Francisco, serves me a De Koninck. He pours it in a traditional bowl-shaped De Koninck beer glass, called a bolleke once it is filled with beer. The beer is light copper in color with a rocky, white head. As I drink, the beer transports me back to Antwerp, Belgium, home of the De Koninck brewery. I once spent the day running around Antwerp and by the afternoon I was hot, tired, and thirsty.

Varietal Meads

The National Honey Board reports that there are over 300 honey varietals in the United States. A single honey varietal's characteristics are largely formed by the nectar qualities from a specific flower or plant variety, and these characteristics are passed into meads made from single honey varietals. This is to say what should be obvious, however sometimes goes overlooked: The flowers the bees collect nectar from in order to make honey matters. Like specialty grains for brewers, honey varietals play one of the biggest parts in forming the flavor of the finished mead, so it is critical that meadmakers understand the differences.

Q. I have been brewing for a little over a year and usually buy my ingredients by the batch, meaning I only buy what I'm going to brew for every batch I make. I have been thinking about buying ingredients in greater quantity and storing them. I know that hop pellets don't age as fast as whole hops, but can or should you freeze hop pellets to extend their life? If you can or should, how long would they keep?

Keep Your Mash Tun Insulated

I entered all-grain homebrewing the way many of us do: I found the simplest and most affordable method that worked. For me, this was a combination of a large pot on the stove and a grain bag for easy infusion mashing and batch sparging. Using a single pot for the mash and the boil reduces your initial equipment costs and removes the need to transfer liquids between vessels, but keeping your mash temperature constant in a bare metal pot can be a challenge. This is especially true when you're brewing small batches, because you don't have the thermal mass of a large volume of water.
